Gluten-Free and Vegetarian Quinoa Black Bean Burgers!

Even though I do allow chicken and fish in my diet, I eat vegetarian most of the time. So I’m always looking for good vegetarian recipes to make. When I was in Trader Joe’s, I saw this pack of organic tricolor quinoa which I have never tried before. Turns out, there was a great recipe on the back for quinoa black bean burgers. I thought this would be a great meal prep idea for my lunch, so I decided to give it a go! Therefore if you’re looking for a healthy meal prep idea to do for the week, I would recommend trying this one! This recipe is also gluten-free and vegan optional.

Quinoa Black Bean Burgers

Ingredients

  • Organic TriColor Quinoa (Gluten Free)
  • 3 Tbsp Olive Oil
  • 1/2 cup diced red bell peppers
  • 1 clove garlic, minced
  • 1 shallot, diced
  • 1/4 cup cilantro leaves
  • 1 can black beans
  • 1 1/2 cups of quinoa, cooked in chicken broth
  • 1 egg (optional)
  • 2 cups of bread crumbs (Ian’s Gluten-Free Panko Breadcrumbs substitute)
  • Seasoning to taste ( I used Trader Joe’s Everyday Seasoning)

Directions

  1. Heat olive oil in a skillet and saute red bell peppers for 3 minutes or until soft. Then add shallots and garlic and continue to saute until soft. Remove from heat.
  2. Add black beans and cilantro to food processor and pulse until chunky.
  3. Cook 1 1/2 cups of quinoa in 3 cups of chicken broth. Bring to boil then reduce to simmer. Simmer for 10/15 minutes.
  4. Blend quinoa with black bean mixture. Add seasoning and egg. Mix well. Refrigerate for 15 minutes.
  5. Mix seasoning and bread crumbs in a bowl. Form patties out of quinoa black bean mixture and dredge patties in bread crumbs.
  6. Fry in remaining olive oil until golden brown (about 3 minutes on each side).
