Even though I do allow chicken and fish in my diet, I eat vegetarian most of the time. So I’m always looking for good vegetarian recipes to make. When I was in Trader Joe’s, I saw this pack of organic tricolor quinoa which I have never tried before. Turns out, there was a great recipe on the back for quinoa black bean burgers. I thought this would be a great meal prep idea for my lunch, so I decided to give it a go! Therefore if you’re looking for a healthy meal prep idea to do for the week, I would recommend trying this one! This recipe is also gluten-free and vegan optional.
