Easy & Healthy Breakfast: Overnight Oats!

Ever found yourself rushing out of the door only to get to work completely starved? Yes, breakfast is the most important meal of the day but many of us skip it because we just don’t have time or let’s be honest, would rather get that extra 15 minutes of shut eye. This is usually me in the morning. I often find myself rushing to get out of the door in hopes of finally catching my train on time (for once). So if it weren’t for easy recipes like these, I would be completely starved until lunch time which is just no way to treat yourself. This overnight oats recipe is truly awesome not only because of how tasty and healthy it is but also because it’s super filling! You certainly will not have a problem making it to lunch with this easy meal. It’s also really simple to make and is something you can prepare the night before—hence avoiding that mad rush in the morning (and getting in that extra shuteye!).

Overnight Oats:

Ingredients:

  • ¾ cup rolled oats (I used Trader Joe’s 100% Whole Grain Rolled Oats which are Gluten Free)
  • 4 strawberries
  • ½ apple
  • ½ banana
  • 1 tsp cranberries (optional)
  • 1 tsp currants (Can substitute cranberries or raisins)
  • 1 tsp honey
  • 3 twists of Trader Joe’s Cinnamon Sugar Spice Grinder (or sprinkle a bit of cinnamon and sugar to your taste)
  • ¼ cup plain nonfat greek yogurt
  • ¾ cup almond milk (or your milk of choice!)
  • 1 tsp blanched and sliced almonds

Directions:

  • Pour the oats in a small container.
  • Add the yogurt and the milk.
  • Add the cinnamon, sugar and honey and mix well.
  • Cut up the apples, strawberries and bananas in small chunks and toss on top of the oats mixture.
  • Sprinkle the currants and cranberries on top of the fruit and then add the sliced almonds.
  • Put the lid on the container and place in refrigerator overnight.
  • In the morning, take out and enjoy or slip in your lunchbox and go!
