Easy & Healthy Trader Joe’s Dinner: Baked Salmon and Roasted Potatoes

I’m always on the hunt for quick and easy dinners that are also healthy and filling. Trader Joe’s is my go-to place when it comes to grocery shopping because they offer healthy, fresh foods at very affordable prices. They also have an awesome frozen food section which includes fresh, unique meals that are quick and easy but delicious! Their frozen dinners range anywhere from $3-$6 bucks each which is very affordable especially considering the quality of the food and the variety that they offer.

Baked salmon is one of my favorite dishes because it’s healthy, filling and super easy to prepare.  So just keep reading to get this simple yet tasty recipe.

Ingredients:

  • Wild Alaskan Sockeye Salmon Fillets
  • Salt
  • Pepper
  • Minced Garlic or garlic powder
  • Trader Joe’s Everyday Seasoning
  • Trader Joe’s 21 Seasoning Salute
  • 2 Tbsp Olive Oil
  • Nonstick Spray
  • Rosemary
  • Thyme

Directions:

Baked Salmon

Prep time: 5-7 minutes

Cook time: 12-15 Minutes

  1. Preheat Oven to 450 degrees.
  2. Spray non-stick spray on a baking dish.
  3. Place salmon on baking dish and coat with olive oil.
  4. Season Salmon very lightly with salt and pepper.
  5. Add Trader Joe’s seasonings.
  6. Mince Garlic and sprinkle over salmon.
  7. Add a pinch of rosemary and thyme.
  8. Place dish in oven and let salmon cook all the way through until flaky or 12-15 minutes.

Directions:

Roasted Potatoes

  1. While Salmon is cooking, add roasted potatoes to non-stick pan and stir fry until soft and hot.
  2. Turn heat to lowest setting and cover until salmon is done.
